Southernmost Norway received its first Michelin star when Under underwater restaurant was awarded one star in the edition for 2020 of the prestigious Michelin guide. “Fresh ingredients and pure, naked flavors are of the utmost importance to us. At the same time, we want to provide a unique dining experience that ushers our guests beyond their comfort zone”, says Head Chef Nicolai Ellitsgaard.

"Under" in Lindesnes is Europe's first and the world's largest underwater restaurant. The restaurant has a large window so diners can see the sea-life as they enjoy their meals. Fish passing by should include pollack and cod, and there are crabs, lobsters and dogfish to see amid the seaweed. Architect Kjetil Traedal Thorsen said: "The big window exposes the underwater not like an aquarium, it’s the real thing."
Entering Under initially feel…
Entering Under initially feels like going into a sauna, as wooden planks cover its upper section, but an eight-meter flight of stairs leads down to a large dining area that sits about 40 guests, walled by a gigantic transparent window to the ocean. The restaurant is laid out so there are minimal reflections in the glass wall, which fills the room with natural light during the day, filtered by the greenish color of the water.

The restaurant, called Under, is the design of Norwegian outfit Snøhetta, which has made a name for itself with projects such as the Bibliotheca Alexandrina in Egypt, the Oslo Opera House, the National September 11 Memorial Pavilion and the renovation of Times Square in New York.
"As a new landmark for Southern Norway, Under is a natural progression of our experimentation with boundaries," Snøhetta founder, Kjetil Trædal Thorsen, said in a statement.

The design's coarse concrete structure makes it easy for mussels to cling to their surface, acting as an artificial reef, whilst unique subsea lighting scenarios attract marine life, which helps rinse the seawater and increase biodiversity.
